Healthy Grilled Chicken with Tzatziki

Chicken is a crowd pleaser and one of the healthier meats we can eat today. Now that summer is around the corner, many of us are trying to modify our diets to eat more salads and fresh fruit, as well as eating healthier to get rid of those extra kg’s we put on during winter. Try this grilled, lemony chicken served with tzatziki for the perfect end to a summer’s day.

 

What you Need to Do:

 

Step 1: Start by making the marinade for your chicken. Mix fresh oregano, thyme and rosemary with olive oil, garlic, lemon and freshly ground pepper. You can take the leaves off the herbs and use those as they cling to the chicken.

 

Step 2: Place 4 boneless chicken breasts into a large zippered plastic bag (E.g. Ziploc). You can use thighs and breasts if you would prefer. Pour the marinade over your chicken and seal the bag. Push the chicken around in the bag until it is all coated with the marinade and then you can place the bag in the fridge for a few hours.

 

Step 3: When you are ready to eat, you can start cooking your chicken. This chicken is fantastic for grilling and when the juices run clear and it’s no longer pink in the centre, your chicken is cooked. You could also pop this chicken on the braai.

 

Step 4: Serve your chicken with a salad and some fresh tzatziki. For a special treat you could add some toasted pita triangles to go with this dish. For the perfect salad for this meal, combine Rosa tomatoes, lettuce of your choice, cucumber, feta and some avocado. Dress with olive oil and balsamic vinegar.

 

This dish is so easy to make and does not take long to cook. The tzatziki adds something special when served with the chicken and it is the perfect, healthy option for a summer meal.
