To make your mini pita pizzas, you will need to do the following:
Step 1: Preheat your oven to 200°C.
Step 2: Place your mini pita breads onto a baking tray and spread your tomato pasta sauce over the base of each mini pita. Arrange your tomato slices and onion on top of the tomato base. You can also add a sprinkle of dried mixed herbs here for extra flavour.
Step 3: Add your thinly sliced red pepper and sprinkle some feta on each pita. Season with some salt and pepper and add your olives and a sprig of rosemary to each mini pita.
Step 4: Bake your mini pita pizzas in a preheated oven for 15-20 minutes or until golden brown. These are best served warm.
For those who don’t like olives or would prefer a bit of protein, you can exchange the olives for some grilled chicken. Any leftovers can be refrigerated and reheated in a moderate oven for 10 to 15 minutes.
