Curried Vegetable Roti Recipe
This dish is the perfect comfort food for vegetarians and can even be enjoyed by meat lovers! It is hearty, healthy and simple to make.
What you will need:
- ¼ cup oil
- 2 small baby marrows, cut into bite sized pieces
- 500g okra, tops trimmed
- 4 scallions, sliced thinly
- 1 chilli, seeded and thinly sliced
- Salt and freshly ground pepper
- 1 can chickpeas, drained but not rinsed
- ½ Tablespoon curry powder
- 1 large tomato, roughly chopped
- 4 cups baby spinach
- ¼ cup full cream yoghurt
- 4 Anat rotis
Here’s what you need to do:
Step 1: In a large, deep pan, heat your oil. Add your baby marrow, okra, scallions and chilli and season with salt and pepper. Cook over a high heat, stirring occasionally until the vegetables are crisp-tender and lightly browned, about 5 minutes.
Step 2: Add the chickpeas and curry powder to your vegetables and reduce to a moderate heat, stirring for 3 minutes. Then, add your tomato and spinach and cook until the spinach has wilted, and the tomato is just beginning to soften, stirring occasionally.
Step 3: Add your water and scrape up any browned vegetable bits stuck to your pan. Season your vegetables with salt and pepper and stir in the yoghurt. Your filling is now ready to go.
Step 4: Stuff your rotis with the vegetable filling and enjoy. This meal is best served warm.
