Fattoush Salad
A Fattoush salad is a staple on any Middle Eastern dinner table. It is just like a normal salad, but with homemade pita chips added, giving a texture similar to croutons. It is a great way to use up any leftover pitas and makes a salad that much more exciting. Find the recipe to make your very own Fattouch salad here.
Ingredients:
- 2 pitas
- Extra Virgin Olive Oil
- Romaine lettuce, chopped (use lettuce of your choice if you don’t have this)
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 3 radishes, stems removed and thinly sliced
- 2 cups chopped fresh parsley leaves (remove the stems)
- Salt and pepper
Vinaigrette
- 1 ½ limes – the juice
- 1/3 cup extra virgin olive oil
- 1 tsp ground sumac
- ¼ tsp ground cinnamon
- Salt and pepper
Instructions:
- In a toaster, toast your pitas until crisp, but not browned. Heat a little olive oil (3tsp) in a large pan and break your pitas into pieces, frying the bits in the heated oil. Fry briefly, tossing often. Add salt and pepper and remove from the pan and the heat. Place the chips on paper towels so that the oil will drain off.
- Combine your chopped lettuce, tomatoes, cucumber, parsley and sliced radishes in a large bowl.
- To make your dressing, whisk together your lime juice, olive oil and spices in a small bowl.
- Dress your salad with your vinaigrette and toss lightly. You are then ready to add your pita chips and give your salad another toss. Serve with lunch or dinner. Enjoy!
