Roasted Veggie Pitas
At Anat we are famous for our tasty shwarmas and delicious pitas, but did you know that you can buy our pitas to take home with you? These are whole, fresh pitas straight from our bakery that you can use to create your own dishes with. While it’s fun to experiment with different fillings, we have a recipe that’s perfect for those who just want veggies.
What You Will Need
To make these pitas you can use any veggies you have and would like to roast. You can also follow what we use below.
- 2 small zucchini – sliced
- 2 peppers (red, green or orange) – sliced
- 200 grams of mushrooms of your choice – sliced
- 1 onion – sliced
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 whole Anat pitas (white or brown)
- ½ cup feta cheese (crumbled)
- Hummus (enough to spread on one half of each pita)
How to Make the Pitas
This couldn’t be easier and won’t take much time at all.
Preheat your oven to 200 degrees and place your veggies on a large baking tray. Drizzle them with olive oil and balsamic vinegar and season with salt and pepper. Toss well to ensure that they are all covered with dressing and seasoning. Roast your veggies for about 20 minutes, stirring occasionally.
Heat your Anat pitas, slice them open and spread some hummus on one side. You can now start filling them with some lettuce, your roast veggies and some crumbled feta cheese. Enjoy!
This recipe is simple, delicious and healthy (especially when made with our brown pitas) and takes no time to prepare. You can choose your favourite veggies and swap out those you don’t enjoy as much, and you can even make this when you have left over roast vegetables after a big lunch or dinner. They are great to take to work or for a school lunch as they can be eaten and enjoyed cold. For an extra special pita, you could also add some halloumi cheese and swap out the feta.
