The Perfect Pizza for Spring
Spring is finally upon us and that means more light, fresh meals to be enjoyed outdoors! Pizza is known as a comfort food, but we think that, with the right toppings, pizza can be the perfect tasty treat for spring. They are easy to make and perfect for sharing. At Anat, our delicious pizza bases available for purchase at leading supermarkets and these make homemade pizzas a breeze as all you have to do is prepare the toppings. In celebration of spring, we have put together the perfect pizza for warm weather and light lunches spent enjoying the sunshine.
What you will need:
(Makes 1 large pizza)
- Anat pizza base
- 75g button mushrooms (chopped)
- 1 onion halved lengthways
- 1 yellow pepper halved and seeded
- 150g mozzarella cheese
- 45ml olive oil
- 3tbsp tomato paste
- 50g feta cheese
- 4 tomatoes roughly chopped
- Basil to garnish
- Salt and freshly ground pepper to season
Now that you have all of your ingredients for a tasty topping, here’s what you need to do:
Step 1: Lightly oil a pizza pan or baking sheet that is large enough for your pizza base. Preheat your oven to 220°C.
Step 2: While the oven is heating up you can sort out your toppings. Slice your mushrooms and pepper and set those aside. Grate your mozzarella and put that in a separate dish.
Step 3: Heat your olive oil in a pan and gently fry your chopped onion for about 10 minutes, or until softened and golden.
Step 4: Now you are ready to construct your pizza! Spread the tomato paste over the base. Mix your mozzarella and feta cheese together and sprinkle half over the base. Top this with your tomatoes, onion, mushrooms and pepper. Sprinkle the rest of the cheese over the top and season with salt and pepper.
Step 5: Put your pizza in the oven and bake for 25-30 minutes or until golden brown. Serve garnished with your fresh basil leaves and enjoy!
